This top quality grape in a warm and clay soil, produced this Ruby colored wine with highlights of violet and a green pepper flavour, toast, coffee and pine nut. It emerges in harmony with the barrel toast, hot and spicy, long and intense, silky. Perfect with game meat dishes and strong cheeses. Best drunk at 16° - 18°C.
Winemaking: Manual harvest. The grapes were previously selected in the vineyard. The must fermented in traditional vats with selected yeasts and temperature control (between 26 – 28°C.). It aged in French aok barrels for 5 months, were it proceeded with the malolactic fermentation, and at least 5 months in the bottle.
